Recipe: Ground Turkey Kababs with Mango Avacado Salad

Last night’s dinner was post worthy, so here it is.

BBQ Turkey Kababs (based on recipe found in The Primal Blueprint Cookbook)

1 - 1.5 lbs. of ground turkey breast
1 tbl. chopped spinach
1 clove of garlic, minced
1/2 tsp. cumin
1/2 tsp. paprika
1/2 tsp. sea salt
1/4 tsp. cayenne
1 tbl. coconut oil

Mix everything up and form 6 - 8 meatballs, elongated slightly. Skewer and cook over hot coals, 3 - 5 minutes per side. I went a little long and they dried out a bit, but were still super tasty.

Mango Avacado Salad

1 Mango, diced
1 Avacado, diced
Pinch of sea salt
Ground pepper to taste

Mix it up and serve. The recipe I had on hand called for a tsp. of gluten free tamari. I opted against that since I’m currently doing a Whole 30, but cocunut aminos would have been a decent option.
